Sweet Potato and Apple Crumble

This is my super easy crumble that tastes just like fall! It can be eaten for breakfast, dessert or as a side, your choice! I made this recipe because although I love Apple pie and crumbles, I wanted to spice it up and add something different. And here we are! I hope you enjoy this new recipe and add your favorite fall spices to make it your own!

– 2 Cups Sweet Potato Chopped

– 3 Cups Apples Chopped

– 1/2 Tsp Cinnamon

– 1 Tbs Olive Oil

– Dash of salt

– 2 Tbs Butter

– 1/4 Light Brown Sugar

For the Crumble:

– 6 Tbs Butter cut into tiny cubes

– 1/4 Cup Light Brown Sugar

– 1 1/3 Cups Old Fashioned Oats

Directions:

Preheat oven to 375. Heat a large skillet over medium- high heat with a tbs of olive oil. Once skillet is hot, add sweet potato, apples, salt, sugar, and cinnamon. Cook for about 15 minutes. During those 15 minutes make the crumble: add oats, sugar, butter and a dash of cinnamon into a bowl, use hands or 2 forks to mix everything together and make sure butter is pea sized. The apples and sweet potatoes should have a light sear on them but still be hard to poke with a fork. Take off heat and pour crumble on top, spread it out evenly but be careful with hot pan. Transfer to oven and cook for 20 to 30 minutes or until crumble is browned and the fruit is cooked through. Serve hot with some ice cream and enjoy!
