This has become one of my favorite breakfast items, its nutritious and very filling. It only takes about 30 minutes and could easily be meal prepped if you have busy mornings. You can substitute the fruit with any of your favorites, I recommend trying peaches, bananas, pears, and strawberries. I used natural cane sugar but if you don’t have that just use maple syrup or brown sugar. My mom used to always add roasted apples into our oatmeal for breakfast and it was always sooo good. The other day I wanted to experiment and try it with some mixed berries I had in the freezer, I knew it was going to work but was unsure about how good it was going to taste. First try, it was delicious even though I added way too much sugar. So I decided to make it again for my family on a beach vacation but instead I used fresh apples and blueberries. Ingredients
- 1 small apple peeled and diced
- 1/2 Cup frozen mixed berries
- 1 Tbs sugar/sweetener of your choice
- 1 Tbs Butter
- Cinnamon
- Salt
- 1 Cup water
- 1/2 Cup of Old fashioned Oats
- Small splash of Heavy Cream (optional)
Directions
Put diced apples and butter in a small pot and bring heat up to medium-high. Once pan is hot and apples are now simmering, add cinnamon, sprinkle of salt and half the tbs of sugar. Cook for about 10 minutes stirring occasionally or until apples are tender and sticking to pan. When apples are done, add mixed berries and cook for about 5 minutes. Once the fruit is done cooking, transfer to a seperate bowl. Add 1 cup of water to the pot and bring up to a boil. Add oats, rest of sugar and a sprinkle of salt. Stir occasionally. When oats start becoming fluffy and water is almost gone, add fruit back into the pot and stir. If you like your oatmeal creamy add a splash of heavy cream or milk, if not, just leave it out. Transfer to a bowl and enjoy!
