This has become one of my favorite healthy recipes! It has lots of veggies and is always filling. Its also accidentally vegetarian! It can be served as a side or a full meal, just add some protein. I like to either add a fried egg or some grilled chicken. Takes about an hour to cook and makes about 6 servings.

Ingredients
- 1 Cup uncooked Quinoa
- 2 Cups Water
- 2 Bell Peppers diced
- 4 Large Carrots Sliced
- 1 Cup Broccoli Florets
- 1 Cup Sliced Mushrooms
- 1 Medium Onion Diced
- Eggs
- Neutral Oil
- Butter
- Salt
- Pepper
- Garlic Powder
- Onion Powder
Directions
Boil 2 cups of water in a pot with a pinch of salt, pour quinoa in and stir around. Place lid on pot, bring heat down to simmer and leave for 20-30 minutes of until quinoa is fluffy and water is absorbed. Once done add a tbs of butter and season to your liking. In another large pan add about 2 tbs of oil over medium heat. When pan is hot add onions and salt and pepper, let onions cook for about 5 minutes and add peppers, broccoli and carrots. Season with salt and pepper and cook for about 10 minutes, add mushrooms. Once mushrooms are done get a small nonstick pan and add 1 Tbs of butter over medium heat. Once hot, crack egg into pan and sprinkle salt and pepper. Cook until whites are done and yolk is still runny. Enjoy!
